Cucumber Mint Gimlet

As an ode to the past few months of summer sun and fun, I am toasting with a cool, minty frozen cocktail. While Kara goes for Cosmos, I am a big gin gimlet fan and I often add cucumber for a crisp, refreshing touch. To keep my cool, I sip my gimlets frozen marrying a blend of mint leaves and a bite of lime. It’s almost 5pm so I it is time to blend up this light, icy green cooler!
Frozen Cucumber Mint Gimlet

3-inch slice of English cucumber, peeled, and chunked, plus 1 sliced round for garnish
7 mint leaves
1 oz simple syrup
juice of 1 lime
1 1/2 oz gin, I use Hendrick’s
1 c ice cubes

Add all ingredients to a blender. Blend on medium speed until slushy and smooth. Pour into your favorite cocktail dress and top with the cucumber round. Makes 1 cocktail.
