Go for the Golden Grilled Pineapple

Last night, we gathered a group to watch the Olympics’ Closing Ceremony celebrating such a momentous two weeks of absolute skill and athleticism. Visually inspired by the shiny metals dangling from the athletes’ necks, we grilled some golden pineapple rings for all to enjoy while watching the spectacle.
Golden Grilled Pineapple Rings

1 pineapple
canola oil

Preheat a charcoal or gas grill to medium heat. With a sharp, serrated knife, remove the top bottom, and outer husk from the entire pineapple. Cut the flesh into 1-inch-thick circles. Cut out the core with a circle mold. A cookie cutter works, we improvised with a large bottle cap. Lightly brush each slice with canola oil and place onto the grill. Flip the rings when dark grill marks appear, about 5 minutes. Cook for another 3-4 minutes on the other side and serve.

The pineapple’s sweet taste and juiciness is intensified by the direct heat. We often serve a slice as a unique side in the summer...
-For an appetizer, chop up the pineapple along with some red pepper, cilantro and jalapeno as a quick salsa.
-In a cocktail, throw a piece into your classic Vodka Soda for a sweet jolt.
-For a main dish, lay a slice atop a spicy chicken burger.
-In a dessert, serve the caramelized ring atop vanilla ice cream sprinkled with fresh coconut or drizzled with chocolate.

The possibilities for this majestic grilled fruit are endless!
