Golden Grilled Pineapple Rings
1 pineapple
canola oil
Preheat a charcoal or gas grill to medium heat. With a sharp, serrated knife, remove the top bottom, and outer husk from the entire pineapple. Cut the flesh into 1-inch-thick circles. Cut out the core with a circle mold. A cookie cutter works, we improvised with a large bottle cap. Lightly brush each slice with canola oil and place onto the grill. Flip the rings when dark grill marks appear, about 5 minutes. Cook for another 3-4 minutes on the other side and serve.
The pineapple’s sweet taste and juiciness is intensified by the direct heat. We often serve a slice as a unique side in the summer...
-For an appetizer, chop up the pineapple along with some red pepper, cilantro and jalapeno as a quick salsa.
