On a summer morning before heading to the beach, we love to fire up the grill. While most people associate grilling with meat or savory dishes, we like to push the limits by creating deconstructed parfaits featuring grilled fruit. A dish of grilled peaches topped with tangy Greek yogurt, sweet honey, and crisp almonds is the perfect light and refreshing breakfast.
Grilled Peaches with Yogurt, Honey and Almonds
4 slightly firm peaches, halved and pitted
2 T canola oil
2 c Greek yogurt (we love Chobani)
1/2 c slivered almonds
1/4 c honey
Preheat grill to medium high.
Brush the peaches with canola oil on both sides and place on the grill, flesh-side down. Grill for 2-3 minutes until seared, and flip onto the other side for 2 more minutes. Transfer the peaches to a platter, skin side down, and top each half with a heaping dollop of yogurt, a sprinkle of slivered almonds, and a drizzle of honey. Feel free to enjoy with a fork and knife or take a bite in hand. Serves 4.
This light breakfast can easily be adapted into a dessert by replacing the yogurt with ice cream or frozen yogurt, and drizzling with raspberry sauce. We’re excited to experiment with other grilled fruits this summer, stay tuned!
